Sausage, Peppers and Onion Stir Fry
Delicious stir fry with smoked sausage, bell peppers, and onions. This whips up very quickly and can be altered while you are cooking to accommodate a variety of dietary restrictions in the house.

- 1 package Sausage, smoked 12 oz
- 3 cloves Garlic
- 1.5 Bell Peppers
- 1 White Onion
- 1 1/4 Cup Chicken Broth
- 5 tbsp Tomato Paste to taste
- 1 1/4 Cup Cooked White Rice
- 1/2 Tsp Black Pepper
- 1/8 Tsp Cayenne Pepper
- 1/2 Tsp Salt
- 1 Tsp Paprika
- Olive Oil
Slice bell peppers, onions and sausage. Peel 3 cloves garlic.
Stir fry sausage in pan until it just starts to blacken. On the edges. Remove and set aside.
Add minced or pressed garlic to the hot pan, allow to cook one minute or so.
Add onions and stir fry until softened. Remove onions and garlic and set aside.
If needed, add olive oil. Add bell peppers and stir fry until softened.
Add onions and sausage back into pan and mix.
Add 4-5 tbsp tomato paste and 1.5 - 2 cups of chicken broth. Stir so that tomato paste is thoroughly infused in broth.
Add black pepper, cayenne pepper, salt and paprika as desired for flavor. Mix thoroughly.
Add in white rice to the pan until the dish is at desired consistency.
Remove from heat and serve hot.
